Fennel Seed
Fennel (foeniculum vulgare) seeds add a warm, spicy, licoricey flavour and fragrance to Indian and Far Eastern curries and spice mixes It is also used in China, the Middle East, Latin America and Europe, to which it is native. Toasting not only brings out the flavour and fragrance but also imparts a definite sweetness. We recommend it with meat (Mexican fennel-crusted pork loin, satay marinades and sauces), as well as with pastas, bread and vegetable dishes. Toasted fennel seeds, plain or sugar-coated, are a digestive and breath sweetener.
