Yellow Curry Paste
Yellow curry is mild and creamy, with a hint of sweetness. Creamy because it is generally made with rich, thick coconut milk and/or coconut cream. It's hot, spice profile and its color comes mainly from the turmeric. It is a good match with poultry, pork and beef. Fry the paste briefly in oil (preferably coconut oil) to release its fragrances before adding coconut milk. Freeze after opening to maintain freshness product remains workable.
