Matsaman Curry Paste (Massaman)
Matsaman also spell as Massaman or Mussaman curry is a fusion of Thai, Indian and Malay culinary influences, medium hot, big flavoured, southern Thai curry redolent with sweet, warm spices, excellent with beef, lamb, duck.
Fry the paste briefly in oil (preferably coconut oil) to release its fragrances before adding coconut milk or other liquids. Freeze after opening to maintain freshness product remains workable.
