Dried Makrut | Kaffir Lime Leaves
Makrut lime trees are small trees with long sharp thorns, knobbly green fruits and unusual double leaves. Both the zest of the fruit and the leaves have a slightly different, but equally wonderful, scent and flavour that is unlike any other citrus. The leaves are best fresh or fresh frozen (fresh leaves are usually available at South China Seas), but when very fresh leaves are carefully dried, as ours are, they remain green and retain a fair bit of flavour and fragrance. Use in stir-fries, soups and curries especially those with a coconut milk base.
